Nishiki is a premium grade of specially selected California-grown medium grain rice. Nishiki rice has excellent water retention and will yield individual grains that lightly stick together without being overly sticky. It is versatile and is suitable for applications such as sushi, rice balls, and daily consumption. Haigamai is halfway between white and brown rice. It is milled using a special process that removes the husk and bran but not the germ resulting in a grain that is more flavorful and nutritious than white rice while cooking quicker and softer than brown rice.
