Nishiki is a premium grade of specially selected calrose rice which is a California grown Japanese medium grain rice. This grain is versatile and can be used in a variety of applications such as sushi, rice balls, and daily consumption. Nishiki rice has excellent water retention and will yield individual grains that will stick together slightly without being sticky.
Musenmai, also known as no-wash rice, is white rice which has been further processed to remove a sticky coating called the hada nuka, or skin bran, which normally must be removed by rinsing the rice prior to cooking.
Brown rice is unpolished rice that has only the husk removed. It still retains the bran and cereal germ which results in a chewier rice that is more nutritious.
