Nishiki is a premium grade of specially selected California-grown medium grain rice. Nishiki rice has excellent water retention and will yield individual grains that lightly stick together without being overly sticky. It is versatile and is suitable for applications such as sushi, rice balls, and daily consumption. Nishiki white rice is musenmai, also known as no-wash rice, has been further processed to remove a sticky coating called the hada nuka, or skin bran, which is normally removed by washing.
White rice is softer and cooks faster than brown rice.
