Yu choy, which literally means "oil vegetable", is a close relative to rapeseed, the plant grown for canola oil. Yu choy has a sweet and mild vegetal flavor with a light and tender texture. The stalks, leaves, and flowers are all edible raw or cooked and boasts a healthy dose of vitamins A and C. Yu Choy is commonly associated with Chinese broccoli (gai lan) which looks similar.
Uses: Blanch yu choy until tender and top with oyster sauce and sesame oil. Stir-fry with garlic, a generous amount of oil, and your favorite sauces or seasonings.
