Yu choy literally means "oil vegetable" due to it's close relation to rapeseed, the plant responsible for canola oil. Yu choy has a sweet, mild, and vegetal flavor that makes it palatable even for picky eaters. The tender stalks, leaves, and flowers are all edible and boasts a healthy dose of vitamins A and C.
Uses: Blanch yu choy until tender and top with oyster sauce and sesame oil. Stir-fry with garlic, a generous amount of oil, and your favorite sauces.
