Yu choy literally means "oil vegetable" due to it's close relation to rapeseed, the plant responsible for canola oil. Sweet, vegetal, and mild; Yu Choy is the perfect side dish even for picky eaters. The tender stalks, leaves, and flowers are all edible and boasts a healthy dose of vitamins A and C.
Uses: Blanch and top with oyster sauce and sesame oil. Stir-fry with garlic. Can be eaten raw if you're feeling particularly adventurous.
