Warabi mochi is a clear, jelly-like mochi that is traditionally made from bracken root starch unlike typical mochi which is made from glutinous rice. It is a simple and delicious snack commonly eaten during summer. Warabi mochi has a wonderful chewy-bouncy texture with a very mild flavor that is improved with a coat of kinako (toasted soybean flour) and with a drizzle of kuromitsu (black sugar syrup).
Ingredients: Muscovado, sugar, corn syrup, millet jelly, granulated sugar, soybean flour, trehalose, hydroxypropyl distarch phosphate, sorbitol, glycine, glyceride.
