Shanghai bok choy are a sweeter, green-fleshed variety of bok choy. Baby bok choy cabbages are picked younger resulting in a more tender, sweet, and flavorful vegetable. Bok choy is often cooked with strong flavors as its mild flavor and tender texture is complementary.
Uses: Blanch and stir-fry with garlic, ginger, and chili. Steam and top with oyster sauce.
