Bagoong is a Filipino condiment made from fermented minute shrimp. The crustaceans are washed in brine, packed with additional salt, and left to age in earthenware until funky, fragrant, and incredibly savory. Ginisang bagoong is a cooked variation of bagoong. The shrimp paste is fried with aromatics, seasoning, and a dash of vinegar and made into a delicious ready-to-use condiment. Use bagoong to add flavor to your favorite stir-fry dishes or as a dip for raw vegetables. It goes particularly well with green mangoes.
