Cha soba are Japanese buckwheat noodles made with the addition of green tea. They have a firm and smooth texture and do not stick together when cooked and rinsed in cold water. These noodles have a higher ratio of buckwheat flour (soba-ko) yielding more flavor and nutrients. Cha soba noodles have an amazing bite with a satisfying texture accented with the rich aroma of green tea.
Uses: Boil soba until desired texture is achieved. Rinse in cold (or ice) water until cool and drain thoroughly. Enjoy noodles in hot broth or cold with your favorite sauces such as tsuyu or ponzu.
