Udon is a type of thick noodle made from wheat flour (komugi-ko). Udon has an incredible texture and is best used in dishes where the noodle is the focus rather than the sauce or accompaniments. Udon is often paired with milder broths and sauces for this reason as the noodle's subtleties and textures can then be fully enjoyed.
Uses: Boil udon noodles until desired texture is achieved. Rinse with cold water and drain.
