Udon is a type of thick noodle made from wheat flour (komugi-ko). Udon has an incredible texture and is best used in dishes where the noodle is the focus rather than the sauce or accompaniments. These noodles are made using the best ingredients from Hyogo (Banshu) prefecture resulting in incredible elasticity, texture, and flavor. These noodles do not get soggy easily and can be precooked and reheated for convenience.
