Soba noodles are made from buckwheat flour (soba-ko) and wheat flour (komugi-ko). Inaka noodles are country-style noodles which are a little thicker than regular soba. They are about as thick as spaghetti and have a wonderful bite and flavor. Every noodle company has their own proprietary blend of flour that changes the final product.
Uses: Boil soba until desired texture is achieved. Rinse in cold water and strain. Enjoy hot or cold with your favorite sauces such as tsuyu or ponzu.
