Galia melons, also known as sarda, is a hybrid melon borne of the green-fleshed Ha-Ogen melon and netted-rind Krimka melon. These melons are sweet with a distinctive flavor that is honeydew-like with notes of cantaloupe, honey, black peppercorn, and monstera. Unlike other melons, Galia melons are checked for ripeness by their rind color and not their texture. These melons are sweetest and fully ripe when the peel turns from green to yellow.
Uses: These melons are superb when eaten raw or paired with cured meats such as prosciutto.
