Lucia longanisa, also spelled longannisa and longaniza, is a type of Filipino pork sausage that has acquired an almost legendary status among pork products. It is available fresh or cured. The pork is chopped instead of ground before being stuffed into natural casings which results in a richly textured sausage. Longanisa is abundantly seasoned with various spices and aromatics that makes for a delicious sausage that is garlicky, fragrant, and savory. Longanisa is characteristically red due to its inclusion of achiote seeds in its seasoning.
