Sablefish, commonly referred to as black cod or butterfish, is a deep water fish that is actually not in the cod family at all. Black cod is highly prized for its opaque white flesh that is intensely rich and buttery in flavor. It is a versatile fish that can be cooked a variety of ways while staying moist and delicious due to its high oil content. Black cod is particularly beloved in Japan where it is paired with miso and a staple item on restaurant menus both traditional and modern.
