Lotus seeds are harvested from the flowers of the aquatic lotus plant that is used as an ingredient in Asian cuisine and traditional medicines. White lotus seeds are harvested from green seed heads with almost fully developed seeds that are deshelled and de-membraned before being dried. Lotus seeds have a distinctive earthy flavor and is high in B vitamins, thiamin, manganese, and phosphorus. These seeds are commonly made into lotus seed paste for desserts and pastries such as mooncakes, crystallized in sugar syrup for snacking, and added to a variety of soups.
Uses: Soak lotus seeds in water overnight before use. Add seeds directly into soups, congee, or other dishes.
