Braised eel is a preparation of saltwater eel, anago, where the fish is butterflied, squared, and slowly simmered in a flavorful sauce. It is similar in appearance to unagi, a Japanese preparation of freshwater eel, but tastes very different. Braised eel is savory and pairs exceptionally well with white rice.
