Sai oui, also known as esan sausage, is a type of fermented sausage from northeastern Thailand. Esan sausage is made from pork and cooked rice which aids in fermentation to achieve a characteristically sour flavor. Esan sausage is traditionally left at room temperature for several days to ferment before cooking to develop its flavor. It is delicious grilled, roasted, or boiled and pairs very well with ginger, chili peppers, and cabbage.
