Spinach is a leafy plant in the amaranth family commonly eaten as a vegetable. It has a sweet and mild grassy flavor that is excellent on its own or paired with other ingredients. Spinach is particularly nutrient dense: it is a good source of carotenoid, vitamin K, vitamin C, iron, and calcium. Whole spinach is edible raw or cooked. It should always be washed thoroughly with the roots trimmed off before use.
