Koon Chun Sauce Factory is one of the oldest and most respected food companies in Hong Kong. They make a wide variety of traditional sauces and condiments using no artificial preservatives, colors, or flavor enhancers. Red vinegar is a Chinese condiment made from a mixture of red yeast rice and white rice. It has about half the acidity (2.47%) of distilled white vinegar (5%). Red vinegar is used as a condiment or finishing vinegar for various Cantonese dishes such as seafood soups or stir-frys. It can also be used to baste foods such as peking duck to help the skin crisp up when roasting.
