Neri goma is a Japanese sesame paste made from sesame seeds that have been deeply roasted over a long period of time. This deliberate slow-roasting minimizes bitterness while bringing out the natural flavor of roasted sesame. Neri goma has a deep and complex sesame flavor that is intensely nutty and full of umami. Black sesame has a deeper flavor than white sesame with a slightly bitter aftertaste.
Uses: Neri goma can be used sparingly as it is very intense. Sesame paste is an ideal ingredient for making dressings, sauces, and various other dishes such as dan dan noodles.
Tahini, while similar, is not a good substitute for neri goma.
