Tsuyu is a soup base made by fortifying soy sauce with bonito flakes, sake, mirin, and kombu. Tsuyu is an essential Japanese condiment commonly used in soba and udon noodle dishes as the foundation of the dipping sauce. Tsuyu is also excellent as a building block for dressings, soups, and other sauces.
