Green zucchini are a variety of summer squash with tender white flesh and soft green skin. They are sweet and mild with a distinctive squash flavor accented by notes of black pepper. Zucchini is edible cooked or raw and their tender skin does not need to be peeled before consumption. They are a good source of vitamins A and C as well as iron and calcium.
