Fermented sweet rice, also known as jiu niang, sweet rice wine, or rice sauce, is a fragrant condiment made from sweet rice, distiller's yeast, sugar, and water. It is the result of immature rice wine production and has a fragrant flavor reminiscent of sweet nigori sake with the texture of rice pudding. Jiu niang is eaten on its own, used as a condiment, or added to hot rice porridge or desserts.
