Citri exocarpium, also known as ju hong, is the dried and aged peel of the pixie mandarin (Citrus reticulata Blanco) which is a cross between the King tangor and Dancy tangerine. These citrus peels are incredibly fragrant and distinctive and are a cornerstone of Chinese cooking. Citrus peels are used in both sweet and savory dishes such as flavoring sauces, adding complexity to braises, and eaten as an herbal remedy. Dried orange peel is also commonly added to tea blends to for warmth, complexity, and aroma.
Uses: Soak dried orange peels in water to soften them before use. The white pith can be scraped off to reduce bitterness before adding them to stews, braises, or stir-fry dishes.
