Burdock root, or gobo, is a long and straight vegetable that resembles a stick. It is high in fiber and minerals and has been used medicinally as an antibiotic, anti-inflammatory, and for detoxing. Gobo is incredibly popular in Japan as a vegetable where it is prepared in a variety of ways such as nimono (simmered vegetables), tempura (battered and fried), and in soups. Burdock has a mild flavor that is subtly sweet, earthy, and woodsy.
Uses: Burdock root and carrots is a traditional side dish made using the kinpira method: slice vegetables into matchsticks and then sauté them to concentrate their natural flavors before being simmering them in a flavorful stock until tender.
