This lobster meat, or chair de homard crue, is harvested from the highest quality hard shell lobsters from the cold waters of Canada. It is shelled using a proprietary technology called high pressure processing (HPP) to yield 100% recovery of edible lobster hygienically and without damage. This lobster is ready-to-eat raw or cooked. We like cooking our lobster in a ripping hot pan with a generous amount of butter and thyme to medium rare doneness.
