Mirin is a sweet cooking wine made by fermenting sake rice until the starches have converted into complex sugars and alcohol. It has a nuanced, complex sweetness and a light syrupy texture. Mirin is a potent flavor enhancer for virtually all foods and is a cornerstone of Japanese and Korean cooking. It is used in sauces, marinades, and stocks. The alcohol helps neutralize odors such as fishiness or gaminess while the sugars and natural flavor of mirin help improve the umai (deliciousness) of food.
