Oyster sauce is an intensely flavorful condiment created by the founder of LKK, Lee Kum Sheung. Lee ran a tea stall that sold cooked oysters where he accidentally left oysters to cook all day and found that the clear oyster soup had reduced into a thick and savory brown sauce. This flavorful oyster extract, after being seasoned and thickened with corn starch, would become the intensely savory condiment known as oyster sauce. Oyster sauce adds an incredible depth of flavor to numerous dishes and is often used as a condiment to top plain foods such as blanched vegetables. Kum Chun oyster sauce is an economical version of the original recipe.
