Longkou vermicelli noodles, also known as glass noodles, bean threads, or cellophane noodles, are made from green mung beans and come from the Shangdong province of China. These noodles cook quickly and yield a final product that is incredibly thin, tender, and silky.
Uses: Steep noodles in boiling water until softened and then used as desired. Longkou noodles can be fried from raw to produce a delicious puffed snack for garnishing.
