De Cecco is a family-owned company that has been committed to conserving the tradition of producing quality pasta without compromise since 1886. This superior quality pasta is made with particular attention to three points:
1. Slow Drying - This pasta is dried in a low-temperature system that preserves the natural flavor, aroma, and color of the semolina.
2. Coarse-Grain Semolina - De Cecco pasta is made using only coarse-grain semolina flour to preserve the integrity of the gluten and yield a pasta which is always "al dente".
3. Cold Majella Mountain Water - Each batch of dough is made solely with cold water from the Majella mountains at a temperature of under 59° F ensuring perfect firmness when cooked.
