Escolar, also commonly known as butterfish or white tuna, is a species of fish found in deep tropical and temperate waters all over the world. Escolar is not a type of tuna despite its nickname: it is a variety of snake mackerel. Escolars are one of the fattiest fish available due to their inability to metabolize the wax esters found in their diet. They have an exceptionally rich and buttery flavor with more than twice the fat content of even fatty tuna. It is recommended to eat 6 ounces or less of escolar per day.

 

These sashimi blocks (saku) are trimmed and ready for use in various raw or cooked preparations such as sashimi, sushi, or poke bowls. For best taste, we recommend eating it within 2 days or freezing it for up to two weeks.
