Fresh bean curd sheet, also known as tofu skin, yuba skin, or tofu sheet is made by boiling soy milk in a large, shallow pan and collecting the skin that forms on the surface. These tofu skins are hung to dry completely flat resulting in thin, large, folded sheets which makes it the most versatile of all yuba products. Just cut this fresh yuba into your desired shapes before use as dim sum wraps, added to your stir-fry dishes, or braised with your soups. Yuba skin is also popular as a vegan skin to wrap substitute meats before cooking.
