Straw mushrooms, also known as paddy straw mushrooms, are a widely consumed in East and Southeast Asian cuisines making them the third most consumed mushroom worldwide. These mushrooms have an earthy and musky aroma with a mild flavor that makes them perfect as an addition to a variety of dishes. Straw mushrooms come in peeled and unpeeled varieties which to the maturity of the fungus. Peeled mushrooms are older as the caps have opened to reveal the gills.
