Oolong, literally black dragon, is a traditional semi-oxidized Chinese tea that is prepared by withering tea leaves under the sun, oxidizing, and then curling or rolling the tea leaves. The oolong can then be aged or fermented for a period of time depending on the tea maker. Oolong teas can have a wide range of different flavors and aromas that range from sweet and fruity to woody and complex depending on the style of production.

 

Tie Guan Yin translates into "Iron Goddess of Mercy" and is named after the goddess of the same name. This tea is light amber in color with a complex flavor and rich aroma.

 

Tung Ding translates into "Icy Peak" and is named after the mountain in Taiwan where the leaves of this tea plant are harvested. This tea is woody, smokey, and rich in caramel notes due to its production that involves being roasted over charcoal.
