Amaebi shoyu is a type of Japanese fish sauce made by fermenting shrimp in soy sauce malt (shoyu koji). Amaebi, also known as spot prawns or sweet shrimp, are cold water shrimp that are highly prized for their exceptionally sweet taste. There exists a few fish sauces made with shrimp heads, but this sauce is made with whole fresh amaebi to create an incredible flavor of sweet shrimp and umami for which there is no substitute.

 

Uses: This sauce is explosively flavorful and should be used by the drop. Add it directly to grilled, stir-fried, or deep-fried seafood dishes involving shrimp, scallop, or uni. It is exceptionally good as a topping for sashimi or sushi.
