Sansai mizuni is a special selection of boiled wild vegetables endemic to Japan. Most of these vegetables are rare or impossible to find fresh due to seasonality, perishability, or scarcity. These vegetables are pre-boiled and incredibly easy to use. Just place wild vegetables in a colander, rinse with cold running water, and drain well before using in soups, stir-fry dishes, or one-pot dishes such as nabe.
