Bell peppers, also known as sweet peppers or capsicum, are the most widely cultivated variety pepper in the world. Unlike most other chili peppers, bell peppers are mild and sweet with virtually no capsaicin even when fully ripe. All bell peppers such as green, yellow, orange, and red come from the same plant. Green bell peppers are harvested while unripe while bell peppers of other colors and left on the vine to ripen. Orange bell peppers are fully ripe: the starches have converted to sugars resulting in intense sweetness and aroma with an absence of vegetal flavor.
