Blue agave nectar is a syrup made from the agave plant that is famously used to make tequila. It has a low glycemic index: the body absorbs it slowly resulting in less spikes in blood sugar levels. Agave nectar is about 1.5 times sweeter than regular sugar so adding a little goes a long way. Agave nectar can be used anywhere that sugar can be used.
