Tarragon, also known as estragon or dragoncello, is a perennial plant in the sunflower family. The woody sprigs hold tender leaves that are refreshingly earthy cut with subtle notes of licorice. Tarragon pair exceptionally well with vinegar, fish, and shellfish. It goes particularly well with lobster.
