Shishito, also known as shishi-togarashi, are a variety of chili pepper that originates from East Asia. They are named for their tips looking like the head of a lion (shishi) and chili (togarashi). They are mild, citrusy, and distinctly fragrant. Shishitos are edible both raw and cooked: they can be part of vegetable crudites or take the stage as a tender, cooked dish.
Uses: Cook shishitos with a moderate amount of oil on high heat while stirring until blistered and soft. Add a generous pinch of salt and the juice of your favorite citrus fruit.
About one in ten shishito peppers are spicy.
