Serrano peppers are a small chili with a rich aroma and moderate spiciness. Serrano peppers are similar to jalapeño peppers but with more spice. Serrano peppers have between 10,000 and 25,000 Scoville heat units compared with jalapeño which have bewtween 2,500 and 10,000. The capsaicin of peppers come from the white pith and ribs which can be removed to reduce the spiciness.
Uses: Serranos make an excellent addition to salsas and dips. Add thinly sliced serrano peppers to sauces for an extra kick. Cooking serranos will reduce its spiciness: slow cooked foods like chili or braises should receive a little bit extra.
