Romanesco, also known as broccolo romanesco or romanesque cauliflower, is an edible flower bud with a natural fractal-like appearance. Romanesco has a broccoli-like flavor that is mild and nutty with an earthy sweetness.
Uses: Romanesco can be used in any recipes that call for cauliflower. We like eating romanesco raw in vegetable crudités, roasted with oil and garlic, or simply blanched in generously salted water.
