Soba noodles are made from buckwheat flour (soba-ko) and wheat flour (komugi-ko). Inaka noodles are country-style noodles which are a little thicker than regular soba. They are about as thick as spaghetti and have a wonderful bite and flavor. Every noodle company has their own proprietary blend of flour that changes the final product. Itsuki soba contains a higher ratio of buckwheat.
Soba noodles can be enjoyed hot or cold!
