Soon tofu is a type of silken tofu: smooth and tender in texture with a mild and refined flavor. Unlike silken tofu that is usually eaten raw, soon tofu is almost always cooked and is specially made to be used in soups such as soondubu. Special care should be taken to cook silken tofu as little as possible in order to preserve its soft texture and keep it from breaking apart. Add it towards the end of the cooking process or use gentle cooking methods such as steaming.
Uses: Make soup as desired and cook until ready to serve. Add tofu last and simmer briefly before serving.
