Gekikara wafu, literally fiercely spicy Japanese-style, hot sauce is made from super spicy peppers, kanzuri, and soy sauce. Kanzuri is a traditional spicy condiment made exclusively in Niigata, Japan. Kanzuri is similar to yuzu kosho: it is a paste that is made from chilli, yuzu and koji. Kaminari hot sauce takes the flavor of traditional kanzuri and enhances it by making it into a hot sauce using some of the world's hottest peppers.
Kaminari gold features Carolina reaper peppers and is spicier while Kaminari red features red habanero peppers.
