Garlic scapes, also known or garlic stems, are the leaves and stems of young garlic plants harvested before the bulbs are fully formed. They are tender and fragrant with a sweet and mellow garlic flavor with minimal pungency and spice. Garlic scapes are a highly prized vegetable that is only available in late spring and early summer for just a few short weeks. They are edible raw or cooked.
Uses: Garlic scape is delicious raw in salads and blended into sauces (particularly pesto). Try it sautéed with a drizzle of finishing oil, soy sauce, and crushed garlic. Grilled or roasted garlic scapes pair superbly with meat or seafood.
