Escarole is a bitter green in the chicory family that resembles a head of lettuce with wavy leaves. It has crunchy leaves with an earthy flavor and pleasant slightly bitter flavor similar to dandelion greens or endives. Escarole is most commonly used in salad mixes or cooked in dishes such as Italian wedding soup or simply with beans and garlic. It is a great source of Vitamin A, K, and folate as well as calcium, phosphorus, magnesium, and zinc.
