Dried baby anchovies, also known as iriko or ikan bilis, are an incredibly umami rich ingredient that is used in virtually all Asian cuisines to add incredible depth, flavor, and savoriness. It is used to make stocks such as niboshi/iriko dashi, create savory bases such as sambal, and deep-fried and eaten whole. Good quality dried sardines will be bright in color with a shining silver strip and abundant savoriness without being overly fishy.
