Egg fruit, also known as canistel or yellow sapote, is the edible fruit of the evergreen canistel tree. These fruits are native to Mexico, Belize, El Salvador, and Guatemala. Canistel, when ripe, have a soft and creamy texture with a rich egg custard-like flavor for which they are named. They are somewhat similar to a sweet avocado in texture and creaminess.


Uses: Ripe canistel is delicious eaten raw or blended into smoothies. Canistel (both ripe and unripe) can be cooked into jams or used as a filling or mix-in for pancakes, bread, and other similar cooked products.


Egg fruit should be ripened at room temperature until uniformly soft similar to avocados.
