Big Kats are a variety of large sized plum that have a black-crimson exterior contrasted by golden flesh. These stone fruits have a mild and sweet flavor that is distinctively plum-like with notes of green mango, apricot jam, and candied pineapple. The skin is crisp and refreshingly acidic for a pleasant contrast.
Uses: Plums are excellent raw as snack or topping for frozen desserts, tarts, and pies. Chopped plums can be cooked gently over a low heat with sugar to make a delicious syrup or compote. Plums also make great pickles: steep sliced plums in 2 parts vinegar to 3 parts sugar with salt, star anise, ginger, and cinnamon and enjoy slowly.
