Garlic is incredible every way you cook (or don't cook) it. It is hard to find a savory recipe that doesn't call for at least a bit of garlic. The delicious pungent flavor is distinct and unmistakable. Garlic is stronger raw and diminishes into a mellow sweetness as it cooks.
Uses: Slow roast whole heads in the oven for 45 minutes af 375F and use the soft cloves as a spread. Mince raw garlic and mix it with herbs, oil, and seasoning for a delicious homemade chimichurri. Add a few cloves at the start of your stocks or soups for deeper flavor.
These are purple garlic heads. The skin will turn a purplish hue as they age.
